In 1247, authorization was given to build a town on the left bank of the Aude, opposite of the fortress. This was a punishment from the king, who evicted traitors from the fortress but they could resettle on the other side of the river. The Bastide Saint-Louis had a quadrangular plan with grid blocks around a central square.The Halles Prosper-Montagne is the town's covered market, situated in a historic building completed in 1768. Inside, it's a great place to stock up groceries if you have a kitchen in your bnb. I was looking for local specialities, such as can or jar version of cassoulet, a stew with bean, sausages, and duck.
